Authentic Jamaican Styled Curried Goat

INGREDIENTS

 

✓ 2 pounds goat meat, cut to bite size

✓ 1 teaspoon salt 

✓ 2 tablespoons minced garlic 

✓ 2 teaspoon finely grated ginger

✓ 2 teaspoons Spicy Hill Farms Dried Thyme Leaves 

✓ 1 teaspoon black pepper

✓ 1 teaspoon Spicy Hill Farms Scotch Bonnet Pepper

✓ 3 tablespoons canola, vegetable or olive oil

✓ 2 tablespoons Jamaican curry powder 

✓ 2 tablespoons Spicy Hill Farms Ram-It-Up

✓ 3 scallions, sliced 

✓ 4 whole pimento berries, crushed

✓ 1 medium onion, chopped

✓ 1 medium carrot, sliced

✓ 1 pound potatoes, peeled and cubed 

DIRECTIONS

 

Special equipment: Pressure Cooker

Total Time: 2 hr 30 min

Yield: 4 to 5 servings

STEP 1:

Add the goat meat, 1 teaspoon salt, 1 tablespoon minced garlic, 1 tablespoon grated ginger and 3 cups water to a pressure cooker. Cook on high pressure for 20 minutes. 

STEP 2:

On the stovetop in a deep pot, add the oil, curry powder, remaining tablespoon minced garlic and grated ginger and cook over low heat until all the ingredients combine together in a paste, 3 to 5 minutes. Add the scallions, black pepper, scotch bonnet pepper, thyme and onions and let simmer 2 to 3 minutes.

STEP 3:

Add the goat and cooking liquid to the curry paste. Add more water if necessary, and simmer until tender, 45 minutes to 1 hour. Be careful not to overcook as the meat will get mushy and fall apart.

STEP 4:

Add the potatoes, sliced carrot and pimento to the meat mixture and simmer until the goat is tender and the potatoes are cooked, about 1/2 hour more. Add the Ram-it-Up 2 to 3 minutes before complete. Serve hot with plain rice and vegetable salad.
